Here we opened up the smoker to show what it looks like about 1/2 way through the process. It’ll take another 3 hours minimum from here to come up to 190, so I’m thinking I probably won’t take it off until 7:00 tonight, which would put me at 11 hours total. The thermostat inside is reading 125, so we’re right where we should be.
